'Tis the season to have quick, delicious (and dare I say "healthy") recipes at the ready for parties. This past Sunday our Bible study class brought finger foods to share. My offering was this recipe of gluten- and dairy-free Fudgey Balls.
12 Medjool dates, pitted and soaked for 30 minutes, drained
1 cup peanut butter (or almond butter)
1/4 cup Hershey's Cocoa natural, unsweetened
In a food processor, blend the dates to a smooth paste. Add the remaining ingredients and process until smooth. Remove from the processor and form into round balls no larger than 1 1/2 inches in diameter. Makes about 30 balls.
