Dill-on-the-Ranch Dressing atop salad alongside beans with Arborio rice
This Ranch dressing is so good, creamy, with a delightful scent of dill -- and dairy-free!!
Dill-on-the-Ranch Salad Dressing, makes 1 cup
adapted from Raw Food Made Easy by Jennifer Cornbleet
1 cup raw cashews, soaked
3/4 cup distilled water
2 Tbsp lemon juice
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp + 1/8 tsp salt
1 tsp dried basil
1 tsp dried dill
Place the cashews, water, lemon juice, garlic powder, onion powder, and salt in a blender (Vitamix) and process until smooth and creamy. Add the basil and dill weed and pulse briefly, just to mix. Store in a sealed container in the refrigerator. Ranch Dressing will keep for 5 days.
